ALMOND BUTTER CHEESECAKE CUPS
Creamy, tangy, with a nutty crust. Individual servings with a refined finish.

INGREDIENTS
Crust:
¾ cup almond flour
2 tbsp almond butter
1 tbsp coconut oil
1 tbsp maple syrup
Filling:
200 g cream cheese
¼ cup almond butter
3 tbsp honey
1 egg
1 tsp vanilla
1 pinch salt
DESCRIPTION
Preheat oven to 170°C. Mix crust ingredients until crumbly and press into the base of small ramekins or cupcake liners.
Beat cream cheese with almond butter, honey, egg, vanilla and salt until smooth. Spoon over crust and bake 15–18 minutes until just set in the center.
Chill completely before serving. Top with fresh berries or a drizzle of almond butter.
